Recipe - Christmas Sugar Cookies

Recipe - Christmas Sugar Cookies

I was looking at Zoella's blog and I saw she made these Christmas Sugar cookies so I thought I just had to try them. I also say that Taylor Swift made some chai tea sugar cookies last year so I thought I would mix them together and add a tablespoon of chai tea into my mixture.

Ingredients:

140g Icing Sugar
1 teaspoon Vanilla Extract
1 Egg yolk
250g Butter
375g Flour
1 tablespoon/ I sachet of chai tea

Step 1
Pre Heat oven to 190oC.

Step 2
Mix together the butter, icing sugar, vanilla and the egg yolk. Also, add the chair tea.

Step 3 
Add flour a little bit at a time until all flour is used and it forms a dough.

Step 4 
Wrap in cling film and chill it in the fridge for around 30 minutes.

Step 5
Spread some flour on the bench top and roll out dough with a rolling pin. Using Cookie cutter, cut out shapes and carefully put them on a lined baking tray. 

Step 6
Put the tray(s) in the oven and bake for about 10-12 minutes until they are lightly golden brown. 

Step 7
Put them on a cooling rack.

Step 8 (Optional)
Decorate them with icing.

Homemade Gingerbread Cookies

I love gingerbread. It's one of my favourite things to eat around Christmas time. So today I decided to make Gingerbread cookies. They are in different shapes to make them more fun.

Here is the recipe.

Ingredients:

125g Butter, At room Temperature
100g (1/2cup) Brown sugar
125ml (1/2 Cup) Golden syrup
1 Egg , Separated
375g (2 1/2 Cups) Plain flour
1 Tablespoon Ground ginger
1 Teaspoon Mixed spice.
1 Teaspoon Bicarbonate of soda (Baking soda)
Plain flour to dust.

Step 1
Pre Heat Oven to 180 C
Line baking trays with baking paper or brush with butter.

Step 2
Mix together butter and sugar in a bowl until pale and creamy with an electric mixer. 
Add golden syrup and egg yolk and mix until combined.
Stir in the flour, ginger, mixed spice and Bicarbonate of soda
Turn onto a lightly floured surface and knead until smooth.
Cover dough in plastic wrap and place in fridge for 30 minutes.

Step 3
Place dough between 2 sheets of baking paper and roll out until 4mm thick. 
Use a cookie cutter to cut out shapes. Place on tray about 3cm apart. 
Repeat with any excess dough.

Step 4
Bake in oven for 10 minutes or until brown. 
Remove from oven.
Transfer to a cooling rack to cool.

Step 6.
Decorate with icing. (If you want to)


That's it. It doesn't take too long to make. It's the waiting 30 minutes for it to rest in the fridge that takes the longest.

Christmas tree on the water.

 Christmas tree on the water.
I can't believe it's already the 21st. I also can't believe I have posted everyday for 21 days. I really enjoyed doing Blogmas. I will most likely be doing it again next year.

This post is a little Christmas tree post. In Geelong they have a Christmas tree on the water.


How gorgeous does this tree look. It also changes colours. 

Anyway until tomorrow.

Blogmas #14 - Taylor Swift Concert + Swiftnic

If you know me you know that I love Taylor Swift. She actually follows me on Tumblr which is so amazing. On Saturday the 12th of December 2015, I attended her concert. It was the last concert of the 1989 tour.

I had brought the tickets on the 12th December 2014 so this year couldn't go fast enough.

I didn't get to meet Taylor, but that's ok because I still had an amazing time at the concert.

Here is my experience.

First I woke up at 8 am because I was way too excited to sleep. At about 3 I started getting ready and at 4:30 we left.

There was a bit of traffic on the way, but we got there by 5:30 pm.

I went with my dad because he is a Taylor fan as well.

We found our seats and we saw that we were actually really close to the stage which was awesome.

We had to wait for a bit because we got there early.

Vance Joy came out first and he sang a few of his songs.

We Sang Happy birthday to Taylor because it was her birthday on Sunday the 13th.

He then left the stage and a while later Taylor came out. Everyone stood up and cheered, I had tears in my eyes when she came out because she has been my idol for over 7 years. This is the 2nd time I have seen her in concert, last one I went to was the red concert.

The costumes were so amazing. I will be adding pictures at the end of this post. 

We had pretty good seat we were about 15 rows from the front and we were right in front of the screen. I danced all night and so did my dad. 

After the concert we tried to find the car and it took us half an hour to find it. We finally found it and we went home.
